Extremely quick and easy this salad has tons of flavour from the deep rich tones of russian kale to the spicy tartness of spring greens. Strawberries add a burst of colour and sweetness that is beautifully set off by the balsamic glaze. Great as a main dish served with a slice of fresh hot garlic bread!

Instructions
Large bowl
If making in a large salad bowl combine leaves, strawberries. Then drizzle with balsamic glaze. Leave ricotta and sunflower seeds on table for self serve.
Single Servings
In individual salad bowls evenly divide spring mix (about 1/4 cup per bowl). Top with kale (about 1/2 cup per bowl)
Add strawberries and sunflower seeds.
Drizzle each bowl with small amount of balsamic glaze (this stuff is rich!!)
Top each bowl with 1 tablespoon of ricotta cheese.
Recipe Notes
This salad can be tossed together into a large bowl for a very quick and easy dish. Personally, I like to prep individual bowls for a pretty layered look! 🙂
