Who said being a gluten free vegetarian had to be boring! This “taco” is far from boring. Sweet, creamy avocado pairs perfectly with the savory sundried tomato compote. This WILL become one of your favorite dishes!
The sundried tomato compote was originally published on kookchannel.com. Here I make a couple slight changes to make it GF and vegan friendly.
Avocado Tacos with Sundried Tomato Compote
Sundried Tomato Compote
Add drained sun dried tomatoes and garlic to a food processor, finely chop.
Place tomatoes and garlic puree into a sauce pan,add in stock, vinegar, sugar and pepper. Cook on medium-low for 10 minutes stirring occasionally.
Slightly warm the corn tortillas; trust me it's so much better! Divide spinach among the tortillas.
Top with 1/4 of avocado, then spread about 1 tablespoon of tomato compote into each taco.
Top with fresh basil and enjoy!
If you eat cheese these are awesome with feta!
Also you can substitute the spinach with any leafy green 🙂
