Mexican Style Fusilli | Gluten Free Pasta Dish
This simple dish comes together in just 30 minutes! Perfect for those evenings that tend to just fly by. With many different GF pastas on the market I recommend the Catelli fusilli for this dish. It cooks fast, holds up well with the tossing and leftovers don’t go mushy. My celiac son requests this dish for school lunches!

1 tablespoon olive oil
1 bud garlic crushed and finely chopped
1 teaspoon Cumin seeds
1 large red pepper diced
2 large Tomatoes ripe or over ripe
1 can Diced tomatoes
1/2 cup Vegetable Broth
1 cup Black Eyed Peas or black beans (about 1/2 can)
1 cup Corn Kernals
1 cup Cilantro, fresh finely chopped
1 tablespoon Red wine vinegar
1 teaspoon Honey local if available

1 box Fusilli, Gluten Free I use Catelli brand
1/2 cup Cilantro coarsely chopped
Quesada grated

Instructions
Add olive oil, garlic, red peppers and cumin seeds to large pot and saute for 3 minutes.
Add all other sauce ingredients and let simmer on medium-low for 15 minutes; stirring occasionally.
Meanwhile cook pasta according to package directions.
Toss cooked pasta with sauce. Top individual dishes with cilantro and quesada. Add salt and pepper to taste.

In the summertime when farm fresh tomatoes are in abundance this sauce can be made without the can!
