Instructions
Clean and dice onion a whole bud of garlic. Add to a large pot with 1-2 tablespoons of olive oil. Cook, stirring constantly to prevent burning, on medium heat until onions are slightly translucent. Approximately 5 minutes.
Coarsely chop tomatoes and add to pot of onions and garlic. Reduce heat to medium low, cover pot and let some to a gentle simmer. If using wine, add now. Cook for 15 minutes or until tomatoes have released juices and are soft.
While sauce is cooking wash and peel celeriac. Use spiralizer to create noodles. Any size setting will do! Set aside until ready to serve.
Gently mash tomato sauce and add in 1 cup of coarsely chopped fresh basil. Add salt and pepper to taste. Return to simmer for 3 more minutes.
Divide celeriac noodles among plates. Spoon hot sauce over noodles and garnish with fresh grated parmesan and ground pepper. Enjoy!
Recipe Notes
The celeriac noodles keep well refrigerated for up to 5 days.
For a heavier meal mix cooked spaghetti noodles with celeriac noodles. This is my kids favorite way to enjoy a spiralized meal!
